Service tax on services charges

05 October 2012 My friend is running a restaurant n bar,they are charging 10% services charges on value of food sold.this service charge is distributed to waiters at the month end as tip.
Can anyone tell me that whether service tax is to be calculated after adding service charge or excluding service charge.
