If a persons fixed gross salary exceeds 15000 but in one particular month his gross falls below 15000 due to absenteeism but that employee has worked in that month for more than 10 days....then should we deduct esi for that particular month???

No. Applicability of ESI need to compare with the actual gross salary, in case of earned salary below the limit because of absent, no need to deduct ESI on that
