things to be carried while vehicle is in transit
what are the documents which are need to keep while vehicle is in transit? suppose I being dealer and selling my product in other state having product value more than 50k and have given delivery challan along with e-way bill receipt....so whether only these two documents are enough when vehicle is in transit???or do I need to produce any other docs for the same?

The goods must be accompanied by invoice/bill of supply or delivery challan and eway bill.
In your case these two are enough
