While calculating tax at the time of Full and Final of resigned employee, his investment to be taken into consideration upto which date i.e. date of leaving the organisation or later date can be taken into consideration.?

In my view the proof which he has submitted until resignation can be taken into consideration and projection of income can be done till resignation
