If a director of a public limited company has resigned and the same was intimated to the stock exchanges, however form 32 has not been filed. Is there a way to undo the resignation?

Reversal of this kind of goof ups is somewhere manageable in ROC work. However there is less margin of error with STX working.
If you try to undo the same without the knowledge of STX, you may face strict show cause notice from STX. I think you should straight away get in touch with STX officials for necessary guidelines/ corrigendum in this regard.

You may send an intimation to the stock exchange, yes along with the withdrawal letter of the director, intimating that the Director has withdrawn his resignation and currently there is no change in the Board of Directors.
Stock Exchange will upload the same information on the website.
