If you opt for composition then you can't collect GST and pay GST from your hand. so better be regular tax payer and collect GST @ 5% and pay gst
If you do outdoor catering service like preparing food at your place and serve at client place then No composition scheme applicable and you have to collect GST @ 18% and take ITC also
