How to calculate value of trading

sir,

 

i am having a doubt regarding how to calculate value of trading whether i have to calculate value of trading (difference of sale and cost or 10% of cost which ever is higher) by which way

1invoice wise

2 year wise or

 3 Project wise

 

Please clarify me
