Can assessing office demand you login to your bank account in his presence, so he can review transactions online, instead of requesting you submit a bank statement, which could presumably be tampered?

Each & every document, as required by assessing officer is to be submitted on paper with due acknowledgement. (Under E-assessment the same are uploaded).
A person can deny access to any bank password or similar keys, based on safety grounds.
